Recipes

Grandma Marza’s strawberry shortcake.

2 C flour
1 1/3 C sugar
1 T baking powder
1 bar butter or margarine
1 C milk
2 eggs
1 t vanilla extract
Sift dry ingredients. Cut butter
In with a mixer or pastry
cutter. Add milk, eggs and
extract and beat. Bake in
a 9x9 pan at 350 for
30-40 minutes until tooth-
pick comes out clean.

Zuppa Toscana

1 lb. spicy sausage, brown and drain
½ lb diced bacon cooked with:
1 diced onion
5-6 diced potatoes
1/2 lb baby carrots, sliced
3-4 cloves minced garlic
4-5 C chicken stock
½ head spinach cut into small pieces
parmesan cheese.

Combine ingredients. Bring to boil and turn down heat. Simmer until veggies are cooked (20-30 minutes). Add 1 C of pasta of choice. Cook another 10-15 minutes. Just before serving stir in a pint of cream, half-and-half or 1 can evaporated milk. Do not boil or soup will curdle. Sprinkle parmesan on top of each serving. Serve with crusty garlic bread, breadsticks.
